My friend Amy made this delicious side dish when she and her family came over to our place for a BBQ. It was a perfect complement to the meal. I was eager to get the recipe and now I'll share it with you. Enjoy!

Cowboy Caviar

 

1. In a large bowl, mix vinegar, hot sauce, oil, garlic, and pepper. Peel, pit and cut avocado into 1/2 inch cubes. Add to vinegar mixture and mix gently to coat.

2. Drain, rinse peas and corn. Add peas, corn, cilantro, onion, and tomatoes to avocado. Mix gently to coat. Add salt to taste.

3. Use cabbage and serve as a salad or delicious with corn chips.
Makes about 4 cups.


Amy's Notes: I usually double this recipe, but do not keep more than 2 days.
